Oso Luscious Chicken Salad

Stop, In the name of flavor. Warning: The following recipe may be habit-forming and cause all other chicken salad recipes to taste bland. Other names considered for the name: decadent, delectable and glorious. You have fully been warned. Eat at your own risk.

Ingredients

  • 1 Oso Sweet Onion (diced)
  • 2 cups Cooked Chicken Breast (diced)
  • 1/4 cup Celery (diced)
  • 1/4 cup Tomato (diced)
  • 1/4 cup Avocado (diced)
  • 1 tbsp. Sage (chopped)
  • 1/4 cup Smoked Cheese (or favorite)
  • 4 slices Bacon
  • 1/2 cup Mayonnaise
  • 1/4 cup Sour Cream
  • 1 tbsp. Mustard
  • 1 tbsp. Soy Sauce
  • lots Black Pepper & Hot Sauce
     
Oso Luscious Chicken Salad

Preparation

Cook bacon, set aside and then slowly caramelize (medium heat, stirring constantly and romantically) the onions in the bacon fat until deep, rich and golden brown. Drain well, pat dry and let cool. Combine chicken, tomato, celery, avocado, cheese, and cooled chopped bacon and onions.

Mix all dressing ingredients and fold into the salad. Top with fresh ground pepper, hot sauce, and serve over salad greens or as a sandwich. Be careful, this is dangerous. Oh So Luscious!


Oso Black Beans

Nothing else can satisfy a hungry family quite like a pot of caramelized onions, garlic, smoked pork & hearty black beans. Topped off with sour cream, chopped onions & hot sauce, it's an endless bowl of flavor.

Ingredients

  • 1 pound Dried Black Beans
  • 1 large Oso Sweet Onion (chopped)
  • 1/2 cup Garlic (chopped)
  • 1/2 cup Tomatoes (chopped)
  • To Cover Water or Chicken Stock
  • 1/2 pound Smoked ham hock (or similar)
  • 3 tbsp. Oregano
  • 1/4 cup Sherry
  • 1 tbsp. Vinegar
  • 1/4 cup Olive Oil
  • To Taste Salt & Pepper
  • 3 Bay Leaves

Preparation

Rinse the beans and combine all ingredients and add into a crock pot or a large heavy-bottomed pot, bring to a boil and then the lowest possible setting (simmer) for 8 hours or overnight. Quick Recipe: Use 2 (32) oz. sized cans of cooked black beans instead of dried black beans simmer for 45 minutes. It's Oh So Hearty! Puree 1 cup beans for a thicker meal and serve with fresh chopped raw Oso Sweet onions. A little hot sauce won't hurt either! Sour cream and salsa are nice as well!


Oso White Bean Chili

If you served this with elbow pasta, it would be the ultimate Italian bean soup. Beans are such a great source of affordable protein, that it's perfect for busy families on the go. Who knew that yummy and good for you could be oso easy?

Ingredients

  • 1 bag Dried White Beans
  • 2 Oso Sweet Onions
  • 1/2 cup Garlic (chopped)
  • 1 pound Ground Chicken or Turkey
  • 1 cup Celery (chopped)
  • 1 tsp. Oregano
  • 1/4 cup Olive Oil
  • 2 each Large Green Mild Chili (deseeded)
  • 2 quarts Chicken Stock or Water (to cover)
  • 2 tsp. Cumin
  • To Taste Salt & Pepper
     
Oso White Bean Chili

Preparation

Combine all ingredients in a crock pot or a large heavy-bottomed pot, bring to a boil and then the lowest setting possible (simmer) for 8 hours or overnight. Quick recipe: Use 2 (32) oz. sized cans of cooked white beans instead of dried white beans. Saute the onions, garlic, celery, chilies, chicken/turkey and saute for 10 minutes on medium heat. Add half of the chicken stock. Then add salt, pepper, oregano, cumin and simmer for 45 minutes, adjust with the remaining chicken stock.

Puree 1 cup beans for a thicker chili and serve. Garnish with shredded cheese, fresh cilantro, tarragon or basil, chopped Tabasco peppers, raw chopped Oso Sweet onions or hot sauce.


Oso Sunshine Slaw

If light and delicious had a baby, it would be named Sunshine Slaw. You can taste the goodness in every bite of papaya, cabbage, sweet onion, mango, mint, rice vinegar & lime.

Ingredients

  • 1/2 head Cabbage (Green, Red or Napa sliced super thin)
  • 1 Oso Sweet Onion (super thin slices)
  • 1 Carrot (julienne super thin)
  • 1 cup Green Papaya (julienne)(optional)
  • 1 Orange (chopped)
  • 1 Yellow Mango (diced)
  • 10 sprigs Fresh Mint (chopped)
  • To Taste Salt & Pepper
     

Dressing:

  • 1/2 cup Olive Oil
  • 2 tbsp. Rice Vinegar
  • 1 Fresh Lime (juice)
     
Oso Sunshine Slaw

Preparation

Lightly toss all dry veggies, fruits, and spices.

Dressing: Combine 1/2 cup olive oil, 1 tablespoon rice vinegar with juice of 1 lime or just use your favorite vinaigrette. Adjust dressing level as needed, as this recipe is quite light. Chill and enjoy!


Oso Sweet-Thyme Rings

Herbs bring out the best in foods, but most people don't use enough, so go crazy. Hint: Rub dry herbs in your hands to release their flavors. Crunchy and juicy, these onion rings are oh so sweet!

Ingredients

  • 2 Oso Sweet Onions (thinly sliced)
  • 1 cup Flour (all purpose)
  • 1 cup Milk
  • 2 tbsp. Seasoned Salt
  • 3 tbsp. Dried Thyme
  • Vegetable Oil for Frying
     
Oso Sweet-Thyme Rings

Preparation

Place thin sliced onions in milk (up to one hour) and drain well. Mix seasonings together with flour in a Ziplock bag. Shake onions in bag until well coated and shake off excess flour. Fry on medium high heat, turning over after one minute and cook until lightly golden brown.
