Oso Cuban Sandwich

The flavor of Havana comes to life with roasted pork, ham, salami, Swiss cheese, onions & tangy Mojo mayo. Hot & crispy pressed with butter; you will crave this sandwich for the rest of your life.

Oso Cuban Sandwich

Ingredients

  • 1 loaf Cuban or French Bread
  • 1/2 pound Glazed Ham
  • 1/2 pound Roast or Baked Pork
  • 1/4 pound Genoa Salami
  • 1/4 pound Swiss Cheese
  • 1 Oso Sweet Onion (sliced)
  • 1/4 cup Mojo Sauce
  • To Taste Pickle slices, mayonnaise, mustard, olives
     

Preparation

Spread a thin layer of mayo and mustard on the bottom half of the bread. Place (in order) pickles, ham, pork, salami, cheese, and then onion slices. Pour the mojo sauce over the onions. Then use mayo on the top portion of the bread to marry with the mojo sauce. Use toothpicks with olives on top and serve. Option: If you have a sandwich griddle, press this superstar sandwich with butter for an even more delicious experience. Or saute each side and then press together. Enjoy!


Oso Maple-Balsamic Chicken Thighs

As the sweet onion roasts underneath the chicken, the maple syrup & balsamic vinegar gently waltz together to create this succulent and easy to make dinner entrée.

Oso Maple-Balsamic Chicken Thighs

Ingredients

  • 6 Chicken Thighs
  • 1 Oso Sweet Onion
  • 1/3 cup Olive Oil
  • 1/4 cup Maple Syrup
  • 3 tbsp. Balsamic Vinegar
  • 4 tbsp. Italian Seasoning (or your favorite herbs)
  • To Taste Salt & Pepper
     

Preparation

Cut the onion into 6 slices, (no skin) and arrange flat in an oven pan (with Pam or spray oil). Place each thigh on top of a slice of onion. Mix the other ingredients together and generously pour/brush over each thigh/onion combo. Try to cover as much of the chicken and onion as possible. Roast at 400 (middle of the oven) for 15 minutes and then at 350 for 30 minutes using the pan juices to baste the thighs 2 or 3 times. Serve together and enjoy! 


Oso Margarita Shrimp

Plump shrimp has a hot meeting with an old flame named Margarita. Add sweet onions, a few other creamy friends & then it's let the taste fiesta begin. Ole'.

Oso Margarita Shrimp

Ingredients

  • 1 pound Large Shrimp (p & d)
  • 1 Oso Sweet Onion (sliced)
  • 1 bunch Fresh Cilantro (chopped)
  • 2 tbsp. Chopped Jalapeno
  • 2 tbsp. Olive Oil
  • 1/4 cup Heavy Cream
  • 1/2 cup Margarita
  • To Taste Salt & Pepper
     

Preparation

Saute onions until clear, add shrimp and chilies and saute 5 minutes or until fully cooked. Add in cilantro and mix well. Carefully add margarita (room temp.) and cook for one minute. Add cream and reduce 50% until sauce-like consistency is reached. Always be careful when cooking with alcohol near open flames, start with the lowest flame possible and away from the burner 


Oso Sweet Brandied Pork Tenderloin

This is one of my favorite dishes to serve at a party because it is oso easy and oso rich. Hint: Make sure the pan is hot for searing the tenderloin and onions. This Brandy cream sauce makes anyone an instant chef!

Oso Sweet Brandied Pork Tenderloin

Ingredients

  • 1 Oso Sweet Onion (large, chopped)
  • 1 cup Brandy
  • 1 tbsp. Olive Oil
  • 1 tbsp. Soy Sauce
  • 1 cup Orange (canned or fresh) sections
  • 2 cups Heavy Cream
  • 1 Pork Tenderloin with pan drippings
  • To Taste Salt & Pepper
     

Preparation

Trim the silver skin from the pork tenderloin and cover with salt and pepper. Sear the tenderloin in a hot pan with olive oil and brown all sides. Don't clean that pan, save it for the sauce. Transfer to an oven pan and cook for 30 minutes or until fully cooked at 350. Let rest 20 minutes and save the pan drippings. Saute onions in the leftover seared pan oil with the dripping on medium heat until clear. Add brandy and reduce 80%. Add chicken stock and reduce 80%. Add cream and reduce 50%. Add soy to taste and orange segments. Pour on a serving dish over the sliced pork. Enjoy!


Oso Sweet Onion Steak Sammies

Here is a perfect dish to make before bedtime. The next day you wake up to an aroma that will romance you all day long. When temptation takes over you can dive in bread first. The meat will be oso tender and the onion soup heart-warming.

Oso Sweet Onion Steak Sammies

Ingredients

  • 1 2-3 Pound Boneless Beef, Sirloin, Flank, Rump,
  • London Broil, Brisket, etc.
  • 2 Oso Sweet Onions (thick sliced)
  • 1 can Beef Consommé
  • 1 cup Your Choice: Sherry, White Wine, Brandy, Red Wine, Beer
  • 2 tbsp. Rosemary (4, if fresh)
  • Water to cover top of Beef
     

Preparation

Combine all ingredients in a crock-pot and boil on high for one hour, then reduce to low and cook for at least 8 hours, overnight is best. When you're ready, remove the beef and let rest for 30 minutes. Thinly slice against the grain and put back in crock pot. Serve slices of sweet onions and juicy beef with assorted bread and rolls pre-stuffed with cheese. Don't forget to dip that Sammie in the wonderful aromatic sweet onion soup.
