OSO Sweet Onion and Bacon Fritters

Serves 6 (About 6 per person)
Ingredients

Eggs, lightly beaten |
1 cup |
Whole Milk |
| 2 1/2 cups | All-purpose Flour |
| 2 tbsp | Granulated Sugar |
| 1 tsp | Salt |
| 1 tsp | Red Curry Powder |
| 1 tbsp + 1 tsp | Baking Powder |
| 4 tbsp | Melted Butter |
| 1 cup | Oso Sweet Onions (finely chopped) |
| 2 slices | Applewood Smoked Bacon, cooked and finely crumbled |
Preparation
Preheat oil for deep fat frying according to manufacturer's directions if using a deep fat fryer, or use a deep heavy pan with oil at least 3 inches deep. Heat oil to 375 degrees.
In a large mixing bowl whisk together eggs and milk. Add flour, sugar, salt, red curry powder, baking powder and butter. Mix well. Fold in Oso Sweet Onion and bacon. Drop dough portions into hot oil from a cookie scoop. Fry until golden browned and cooked throughout; about 3-5 minutes. Remove fritters with a slotted spoon to drain on paper towels. Prepare fritters in small batches for best results. Serve warm or at room temperature.
