Oso Sweet Onion Picnic Bites

Serves 6
Ingredients
| 1 Large | Oso Sweet Onion |
| 2 tsp | Butter |
| 1/4 tsp | Salt and Pepper |
| 4 oz. | Crumbled Blue Cheese |
| 6 Slices | White Bread |
| 1 tsp | Chopped Parsley |
Preparation
Slice onion into thin slices and place in frying pan on medium/medium high heat that has 1 tsp butter. Stir every 5 minutes, until onion is carmalized, about 30 minutes. Do not over brown or fry. Add salt and pepper. Take off stove.
Take mini muffin pan and the remaining 1 tsp of butter and grease. Take biscuit cutter or small glass and make 1 1/2 -2inch cut out circles from each piece of bread. Press bread into bottom of tin to form little cup. With spoon place onion in cups, add crumbled cheese on top and bake in 350 degree preheated over for 8-10 minutes, until slightly brown and cheese softened. Take out, top with parsley. Eat immediately or can be stored in container and eaten at room temperature. Serve with crisp white wine on picnic!
