Chicken and Oso Sweet Onion Paella Picnic Salad

Serves 6-8
Ingredients
| 2 | Yellow Saffron Rice Mix (5 oz. packages) |
| 3 tbsp | White Balsamic Vinegar |
| 2 tbsp | Fresh Lemon Juice |
| 3 tbsp | Extra Virgin Olive Oil |
| 1/4 cup | Mayonnaise |
| 1 tsp | Poultry Seasoning |
| 1 | Yellow Bell Pepper (seeded and diced) |
| 1 | Cucumber (peeled, seeded and diced) |
| 1 | Celery Stalk (thinly sliced) |
| 1 cup | Grape Tomatoes (cut in half) |
| 1/3 cup | Dried Blueberries |
| 2 cups | Diced Chicken (cooked) |
| 1 | OSO Sweet Onion (large) |
| 1/3 cup | Marcona Almonds (chopped) |
| 6 | Fresh Basil Leaves (staked, rolled & thinly sliced) |
Preparation
Cook rice according to box directions; set aside to cool.
Whisk together the vinegar, lemon juice, olive oil, mayonnaise and
seasoning in a large mixing bowl.
Add bell pepper, cucumber, celery, tomatoes, blueberries, chicken, onion
and cooled rice; toss to coat. Sprinkle with almonds and basil.
