Charred Oso Sweet® Onion & Tomato Salsa

Yield: 1 1/2 quarts
Ingredients
2 each |
OSO Sweet® Onion, peeled and sliced 1/4" thick |
| 4 each | Tomatoes, diced 1/4" |
| 1/2 teaspoon | Garlic, chopped |
| 3 tablespoon | Cilantro, chopped |
| 1 each | Jalapeno Pepper, seeded and minced |
| 4 oz. | Tomato Sauce |
| 2 tablespoon | Scallions, chopped |
| 2 each | Limes - juiced |
| 2 dashes | Tabasco Sauce |
| To taste | Salt and Black Pepper |
Preparation
Oil and season sliced onions with salt and pepper.
Cook on an outdoor grill over high heat, making sure that the onions are charred.
Remove from grill and allow to cool for 30 minutes. Cut into 1/4" dice.
Mix all ingredients together.
Season with salt and pepper.
Refrigerate for at least 4 hours before serving. Can be made a day in advance.
