Oso Sweet® Onion Southwestern Dip

Serves 8
Ingredients
1 each |
OSO Sweet® Onion, 1/4" dice |
1 teaspoon |
BBQ Spice |
| 1 tablespoon | Vegetable Oil |
| 12 oz. | Chorizo Sausage (ground) or Ground Beef / Sausage |
| 1 tablespoon | Vegetable Oil |
| 16 oz. can | Refried Beans |
| 1/2 cup | Cheddar Cheese, shredded |
| 1/2 cup | Pepper Jack Cheese, shredded |
| 1/2 cup | Sour Cream |
| 1/4 cup | Scallions, chopped |
| 3 tablespoon | Cilantro, chopped |
| 1 bag | Tortilla Chips |
Preparation
Onions:
In a skillet – heat oil. Add onions and bbq spice, cook onions for 10 minutes until cooked and lightly golden brown. Remove from heat and keep aside until ready to assemble.
Chorizo or Ground Beef / Sausage:
In a skillet – heat 1 tablespoon oil. Add Chorizo and cook over medium heat for 10 minutes until cooked. Drain excess fat and keep aside until ready to assemble.
In a small casserole pan - layer ingredients in this order:
- Refried beans
- Cooked chorizo (or other meat)
- OSO Sweet® onions
- Pepper Jack Cheese
- Cheddar Cheese
Bake in preheated 375 degree oven for 15-20 minutes. Remove from oven and allow to cool for 15 minutes. Top with sour cream, scallions and cilantro.
